Sounds…interesting, right? It’s actually one of my favorite salads because it has a variety of textures, temperatures, and tastes (hello sweet dressing and savory bacon!!!)
Here’s what you need for the salad:
- 1 five oz can of sliced water chestnuts
- 4 cups of spinach leaves
- 3-4 hard boiled eggs
- 1 cup of sliced mushrooms
- 6 slices of cooked bacon (or more, we love bacon!!), chopped into pieces
For the dressing:
- 4 Tablespoons of granulated sugar ( more or less based on taste)
- 1 /4 cup canola oil
- 3 Tablespoons ketchup
- 1/ 2 of a sweet onion shredded
- Pinch of salt
- 2 Tablespoons of apple cider vinegar
This serves about 4-6 people
- Toss cleaned spinach into salad bowl.
- Rinse sliced water chestnuts in strainer, then add to top of spinach.
- Add sliced hard boiled eggs and sliced mushrooms.
- Sprinkle bacon pieces to top it all off!
- In a separate bowl, whisk canola oil, apple cider vinegar, sugar, ketchup, shredded onion, and salt together.
- Drizzle the dressing on top and serve!
