Bacon Egg Spinach Salad

Sounds…interesting, right? This salad is actually one of my favorite salads because it has a variety of textures, temperatures, and tastes (hello sweet dressing and savory bacon!!!) For tips on how to make the Perfect Hard Boiled Eggs, check out our recipe here

Bacon and eggs for dinner! Well, with a healthy-ish twist. We may not eat as much bacon as eggs in our house, but the bacon definitely pairs perfectly with this sweet dressing. You can always swap out the bacon for other options ( check out American Restaurant’s bacon substitutes ).

    Make Bacon and Arrange Salad
  • Bake at least 6 or more pieces of bacon at 400 degrees for 20 minutes or until crispy. Gather spinach and large salad bowl. Start by tossing cleaned spinach into salad bowl. Then, rinse sliced water chestnuts in strainer, then add to top of spinach. Cut up hard boiled eggs into even slices. Remove stems from mushrooms and slice into bite size pieces. Add to top of spinach.
  • Once bacon has cooled, chop bacon into bite size pieces. Sprinkle bacon pieces to top it all off!
  • Make the Dressing
  • Gather a small bowl, your dressing ingredients, and a whisk.
  • Whisk canola oil, apple cider vinegar, sugar, ketchup, shredded onion, and salt together.
  • Drizzle the dressing on top and serve!
